3 types of pkhali with Koen’s sour dough bread

One of the best things about traveling is bringing inspiration back home. Our first day in Moscow we visited a Georgian (the country!) restaurant and we fell in love with the cuisine. During the week we try to eat vegetarian, so why not try making pkhali ourselves?

Pkhali is a sort of vegetable pâté made with walnuts and garlic, topped with pomegranate. The recipe reminds me a bit of pesto. I decided on three sorts: spinach, beet, and red beans, with the spinach as my favorite. Really easy to make, healthy and beautiful! Definitely will plan on making these again as an appetizer for a dinner party.
