Roasted bone marrow with sour dough bread and parsley salad

 

When Koen and I were in London, we visited Fergus Henderson’s restaurant St. John. If you have the opportunity to visit, you have to try their most famous dish – toasted with roasted bone marrow and parsley salad. So delicious!

Koen and I chose to recreate the dish for Sunday brunch. First Koen baked his famous sour dough bread, then we roasted the bone marrow in the oven with salt and pepper, which was served alongside a parsley salad with shallots and caper berries. Mmmm!
