For Easter this year we headed to Breda to celebrate at Sofie’s. We had a delicious brunch followed by egg painting. Not egg dying like we do back home, but really serious, detailed designs. A fun afternoon!
For my birthday I received The Green Kitchen from my sister-in-law Barbara. She knows that I am a fan of the Green Kitchen Stories blog, and surprised me with the cookbook. I am having a great time exploring the recipes – like the Marcarpone Beanotto with Mushrooms and Spinach, a riceless risotto, and the Amaranth and Halloumi-Stuffed Tomatoes. All are delicious! The best recipe by far that I’ve tried is the Sicilian Parmigiana Di Zucchine. Not only is it the best recipe from the book that I’ve tried, but Koen puts it in his Top 10 meals I’ve ever made. Can’t wait to make it again!
Yum! I am so happy I found Jamie Oliver’s recipe for a South American-style brunch. I had an avocado and cilantro at home, so I did a search on Jamie’s website and found this dish. The quinoa is topped with warm pan-fried black beans and eggs and cold diced avocado, tomatoes, cherry tomatoes, self-pickled chilli peppers, cilantro, and mint!
On Sundays Koen spoils me with homemade breakfasts. Most recently Koen made kaasbroodjes and worstenbroodjes from scratch! Yum!! Basically it’s cheese (kaas) and sausage (worst) baked in a pastry in the oven.
A few weeks ago I’ve also been experimenting with making my own granola to eat in the mornings. Usually I make a smoothie, but sometimes it’s nice to have something quick on hand if I’m running late. Lately I’ve seen a lot of people eating quinoa granola and found a delicious recipe from Brooklyn Atlas – Coconut Quinoa Granola! The results have been fantastic and it’s super easy to make, so I’ve made extra batches for my sister-in-laws and colleagues.
While my parents were over, I wanted to make a breakfast quiche. I asked what I should make and in the end spinach and tomatoes won. I had never made a spinach and tomato quiche, so after searching through recipes, I found this one from Prevention RD which is with goat cheese and a potato crust.
Tonight for dinner Koen made sushi! My favorite roll is a bit boring but delicious: salmon, avocado, and cucumber. It’s so light and fresh!
