Sicilian Parmigiana Di Zucchine

The Green Kitchen

For my birthday I received The Green Kitchen from my sister-in-law Barbara. She knows that I am a fan of the Green Kitchen Stories blog, and surprised me with the cookbook. I am having a great time exploring the recipes – like the Marcarpone Beanotto with Mushrooms and Spinach, a riceless risotto, and the Amaranth and Halloumi-Stuffed Tomatoes. All are delicious! Lately I’ve seen a lot of people eating quinoa granola and found a delicious recipe from Brooklyn AtlasCoconut Quinoa Granola! The results have been fantastic and it’s super easy to make, so I’ve made extra batches for my sister-in-laws and colleagues.

I had never made a spinach and tomato quiche, so after searching through recipes, I found this one from Prevention RD which is with goat cheese and a potato crust.
