Inch Bar
Koen and I just returned from a long weekend in Barcelona, where my graduation was being held. We stayed in the Gràcia neighborhood, in the north of the city, where Park Güell is located. Of course it’s fun to explore the neighborhood!

Koen’s Cubano Sandwich
Koen and I love watching movies about food, so it’s no surprise we like the movie Chef. It’s by no means a perfect film, but it will certainly make you crave a Cubano Sandwich. When we decided to rewatch it this weekend, of course we needed the correct food pairing. We love any excuse to eat a Cubano!

#1 Cheese shop in Europe
To celebrate my thesis defense, my father-in-law joined me in Berchem for an assortment of delicious cheeses at Michel Van Tricht & Zoon Kaasaffineurs before joining Koen for dinner at Orso Pizzeria.

Time to celebrate!
A couple of weeks after turning in my thesis, I needed to head to Brussels to defend it. After a lot of preparation to be able to present and answer any questions they may possibly have – it’s over! I’m finished! No more classes, no more papers, no more exams, done!

Indian Dinner
Good Indian restaurants is something Antwerp is really missing. So when we’re in the mood, we tend to dedicate an entire Sunday preparing dinner. This time we chose to recreate the delicious dahl we had at Dishoom in London’s King’s Cross. Although rather than cooking for 24 hours, I only had the afternoon and let it simmer for 5 hours (the next day it was even more delicious!).

Finished! Finally finished! After three months of no free time – researching and writing in the evenings after work and on my days off – my thesis is completed! One step closer to my MBA!

One great thing about attending an international business school is that I get to meet students from all over the world. And what brings people together like food? A couple of nights ago Koen and I went to Ines and Francisco’s apartment for a Portuguese dinner of chorizo and a bacalhau and potato casserole – and of course Portuguese wine!

Tonkotsu Ramen
One of my favorite dishes while in Japan was tonkotsu ramen. “Tonkotsu” means “pork bones” in Japanese. The dish is aptly named, because the broth is made by boiling pork bones for almost an entire day. When Koen decided to make the dish, it took an entire weekend to prepare!
